Crab Cocktail with Avocado

avacado1Have you ever ate a salad and thought, man, it’s like something is missing. Just a little bit of something extra. A “kick”, if you will. Or perhaps you ate an avocado and thought, so bland. Once again, it needs a “kick”. Have no fear. There are answers! And for those seafood lovers, it’s a great answer. Allow me to introduce the crab cocktail with avocado. Not only is it a great pairing for avocados, but it really offers a more dimensional taste to a salad. I don’t even use dressing on the salad. I simply transfer the crab mixture into the salad along with the avocado, and it creates a great dressing and a mouthful of delicious flavor.

For me, it was as though I was enjoying a California roll without the soy sauce and seaweed. Very similar taste and it has the spicy wasabi that really gives you that “kick”.

A few alternative ways we enjoy this dish is we sprinkle chow mien noodles on top to give it a crunchy texture. I’ve also mixed the avocado with the crab cocktail to create a dip, which has an Asian inspired taste. Lastly, we enjoy seaweed, so cutting the avocados into slices and applying the mixture onto a nori sheet with rice, rolled, was just as great as enjoying a California roll.

Crab Cocktail with Avocado

Ingredients

  • 2-3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 2 tablespoons lime juice, divided
  • 1/2 teaspoon wasabi paste
  • 4 pinches of finely minced spinach leaves
  • 8 oz crab sticks
  • 4 avocados
  • Salt and pepper
  • Greens for salad

Instructions

  1. Mix the mayonnaise and yogurt today, then stir in 1 tablespoon lime juice and wasabi paste. Add crabmeat and spinach. Season with salt and pepper to taste, and mix well.
  2. Cut the avocados in half lengthwise and remove pits. Brush with remaining lime juice.
  3. Fill avocados with crab mixture and serve with salad greens.
  4. Serve immediately
